One thing that Top Chef panel criticism brings out is how important psychology is in cooking/eating. When they kicked the dude off this last time for his smores, they emphasized how they were “disappointing.” Disappointment doesn’t indicate quality in an absolute sense, only in a relative matter compared with expectations. The judges have repeatedly dissed people for calling their dish the wrong name, and on the other hand, Blaise’s whole schtick was playing food off words to confound expectations. I can’t say that I find any of this to be interesting, though. I eat, I don’t think.
